Randy’s Seafood Operations Adopt New Technology for Sanitary Ice
In the fresh seafood business there are two enduring concepts: keep it cold and keep it moving.
Now, thanks to new technology , we can add to this wisdom; keep it ozonated!
Randy’s Fishmarket Restaurant in Naples and Randy’s Paradise Shrimp Company in Bonita Springs have installed a new patented system which infuses ozone into the water used to make ice. Ozone infused ice is used in the fresh fish display cases and releases ozone as it melts. The small concentration of ozone kills bacteria and contributes to sanitation and maintaining freshness of the seafood.
How does it work? Ozone (O3) is basically a form of oxygen. It is created by passing oxygen through a high voltage electrical field. It is a well-known sanitizer in the food industry because when it comes into contact with bacteria it rapidly destroys the cell wall and kills the organism.
And, it’s safe. It is approved by the FDA for direct food contact and it leaves no residues like chlorine and ammonia based products. And it’s green because it quickly reverts back to regular oxygen.
“The system is value priced and very simple to install,” says Guy Ewing, seafood processing and food safety consultant for Randy’s operations. “Since good sanitation contributes to maintaining freshness of fish, the ozone infused ice plays a key role.”
According to Ewing, maximum benefit of this system will be realized if it is also implemented by Randy’s seafood suppliers. “This is why,” notes Ewing, “we are working with Randy’s fresh fish suppliers to install the system on their ice machines and their delivery trucks.” “The further down the supply chain this technology is used,” says Ewing, “ the more benefit to the consumer.”
